How should I store my chocolates?

To maintain the freshness of your purchase, we recommend that you store your chocolates in
a cool dry cupboard away from heat or light source and any perfumed items such as soaps etc.
And never leave them in parked car for any length of time.

Only refrigerate in extreme weather conditions, in which case place in an airtight container and then wrap the container in a double layer towel before placing in the bottom section of the fridge. When you wish to use the chocolates remove from fridge, leaving container wrapped in the towel, until it has warmed to room temperature. It will then be less likely that blooming will occur. If chocolate is exposed to temperature fluctuations, the chocolate may appear white.  The chocolate is still edible, but the quality and texture will be affected, see ‘how should
I store my chocolates?' to ensure your chocolate is kept at its best.

How do I store sugared almonds?

Bomboniere, bonbonniere or koufeta? And what is a bomboniere?

Known as bomboniere by the Italians, bonbonniere by the French or Koufeta by the Greek.  They are a small gift, accompanied by 5 sugared almonds given to each of the guests to thank them for participating in your special day.

Why give out sugared almonds?

5 sugared almonds are traditionally given at weddings to symbolise the bitterness and sweetness of marriage (bitter taste of the almond, and sweetness of the sugar coating).  The sugar coating is added with the hope that the life of the new couple has more sweetness than bitterness.  Why the number 5?

Italian Weddings: The five almonds (known as confetti) have significant meaning - wishing the new husband & wife: happiness, health, wealth, fertility & longevity.  Some times 3 sugared almonds are given to symbolise the bride, groom and their future child.  If offered a sugared almond, it is polite to accept it and eat it!

Greek Weddings:  Sugared almonds are given as odd numbers as odd numbers cannot be divided by 2 - so the bride & groom will remain undivided!

Middle Eastern Weddings: Sugar coated almonds are considered aphrodisiacs.  They are always on hand...careful not to eat too many, or you may want to leave the reception early!

Australian Weddings: Now days, it has become increasingly popular to give 5 foiled chocolates!  A modern twist on an ancient tradition!

Why are there different coloured sugared almonds?
